MIAMI BEACH, FLA. — In honor of Earth Month, Slow Food Miami invites food enthusiasts to partake in a celebration of sustainable and locally-sourced cuisine at the highly anticipated Snail of Approval Tasting Party.

Event Highlights

Scheduled for April 3rd from 7 p.m. to 10 p.m., the 14th Annual Snail of Approval Tasting Party will take place at the Eden Roc Miami Beach. This event not only serves as a tasting experience but also recognizes chefs and artisans committed to sustainable culinary practices.

Michele Benesch, a representative from Slow Food Miami, emphasized the importance of the event: “Slow Food Miami is very proud that this is the 14th year for this event. It’s a way we celebrate those chefs and artisans and get to honor them for everything they do.”

A Focus on Sustainability

The Snail of Approval program identifies eateries that prioritize the sourcing of local ingredients through sustainable methods. This year, among the honorees is Paya, a Miami Beach establishment recognized for its commitment to quality and sustainability.

“It’s about the food. We start with the ingredients, and that’s how our concepts work outward from there, so to be recognized for what we put so much effort into is incredible,” said Mohamed Alkassar, owner of Paya.

Menu Features

Paya’s offerings reflect the vibrant flavors of the islands, featuring the freshest daily catch and dishes that highlight local produce. Highlights include:

  • Daily Catch: Grilled tile fish served on a bed of rice accompanied by farm-fresh vegetables and a coconut curry.
  • Coconut Wahoo Ceviche: A refreshing dish paired with avocado, peppers, and island-style chips.
  • Truffle Brie Grilled Cheese: Crafted with Sullivan Street sourdough and served with homemade mango jam, made from mangos sourced from their farm.

Kyla Benesch expressed the difference in quality, stating, “It was truly amazing. You could taste how fresh and organic everything is, and it’s just all the flavors in your mouth just combined, and it’s just an amazing meal to eat.”
