Red Rooster Overtown Hosts “Buboy” Pop-Up Featuring Top Chef Winner Tristen Epps

Red Rooster Overtown in Miami opened its doors on July 25, 2025, for a limited-time pop-up titled “Buboy,” led by Top Chef Season 22 winner Tristen Epps. The event, held at the restaurant in Miami’s historic Overtown neighborhood, showcases a prix-fixe menu that merges heritage dishes from Epps’s earlier Red Rooster tenure with preview items from his forthcoming fine-dining restaurant in Houston.

Epps reintroduces Miami favorites like the Rooster Royale—a whole chicken glazed with tamarind and malta—alongside crispy green tomatoes with comeback sauce, oxtail fried rice, and tuna crudo with Cuban coffee ponzu. These dishes are paired with new creations that reflect the Afro-Caribbean and Asian fusion flavors central to his future Houston concept. The pop-up explores deep cultural themes, drawing on the history of the African diaspora and celebrating culinary storytelling through taste.

Chef Marcus Samuelsson, the founder of Red Rooster, praised Epps for his creativity and purpose, calling the pop-up a full-circle moment. For Epps, the series represents a way to honor his roots while giving diners a preview of his next culinary chapter.

Throughout the pop-up, the menu rotates, with a focus on lighter, seafood-forward dishes that speak to Miami’s Afro-Latin and Caribbean influences. The upcoming Houston restaurant will feature a heavier, meat-centric menu with West African and Asian elements, highlighting Epps’s vision for upscale diaspora cuisine.

Epps, who leads Epps & Flows Culinary, brings a global perspective shaped by his Trinidadian background and upbringing in Guam, Japan, and the Philippines. During his earlier tenure at Red Rooster Overtown, he helped the restaurant earn national acclaim, including a Michelin Bib Gourmand and a spot on Condé Nast Traveler’s list of the best new restaurants worldwide. He was also named a Rising Star Chef in 2021.

The Buboy pop-up blends nostalgia and innovation, offering longtime fans a taste of familiar favorites while welcoming new guests into a rich cultural dining experience. Reservations are available online, and the event will run through the end of July.

Looking ahead, Epps plans to open Buboy in Houston later in 2025, where diners can expect an elevated tasting menu featuring Wagyu steak, foie gras pâté, and fusion-style dumplings. Each dish will be designed to celebrate diaspora identity in a refined, immersive setting.

Red Rooster Overtown, long known for honoring Miami’s Black cultural legacy, provides a fitting venue for this creative collaboration. Through Buboy, Epps brings history, community, and culinary excellence together in a way that resonates far beyond the plate.
