(WSVN) – Cheese makes everything better! This morning we put a cheesy twist on a classic chicken dish while snacking with Belkys.
material:
2 boneless, skinless chicken breasts (about 8 ounces each)
salt and black pepper
1 1/4 cups breadcrumbs
3/4 cup grated Parmesan cheese
1 tablespoon finely chopped fresh parsley, plus more for garnish
3 tablespoons extra virgin olive oil
1/4 cup mayonnaise
1 tablespoon garlic powder
Preparation method:
Heat oven to 425 degrees. Place parchment paper on a baking sheet. Pat the chicken dry with a paper towel, then carefully cut the breast in half horizontally to form two thin cutlets. (There will be 4 pieces total.) Using a meat mallet or rolling pin, pound the cutlets until 1/4 inch thick. In a large, shallow bowl or rimmed plate, combine breadcrumbs, Parmesan, parsley, garlic powder, salt and pepper. Mix, then add oil and stir until breadcrumbs are evenly coated. Working one at a time, brush one side of each chicken cutlet, mayonnaise side down, into the breadcrumbs, pressing gently to coat the chicken. Cover the other side with mayonnaise, flip and repeat, coating both sides with breadcrumbs. Place the breaded chicken in the prepared skillet and roast for 20 to 25 minutes. Rotate the pan halfway through the cooking process until browned and cooked through. .Sprinkle with parsley and enjoy.
